What I'm Eating 


Ground Turkey Meatballs 

The start of 2021 means New Years resolutions, and one of mine was to get better at prepping meals for the week. About a week ago I scoured Pinterest for easy and healthy recipes, and this was one of the top. Ground turkey meatballs are a quick, delicious, and healthy way to get protein in your day. They are also super easy to transport to work for lunch. You can eat them cold or hot and pair them with a variety of different things (rice, veggies, etc.). This is the recipe that I used! What I'm Wearing


Capsule Wardrobe 

Instead of wearing something new lately, I cleaned out! I decided that I wanted to start the year off right, as I've been looking for an excuse to start narrowing down my closet to a capsule wardrobe. I will post a lengthier explanation of how I went about this in the future, but I was about to get rid of around 4 bags worth! I'm excited because I think it will be much easier for me to get dressed because the things I actually wear are what are taking up my closet. This article by The Everygirl is a great resource for closet cleaning!




What I'm Making 


Future Trip Plans 

I've decided that since we can't really go anywhere for now, that I will be planning all our future trips in the meantime! I've started with Scotland/Ireland and been exploring destinations like Edenbourgh and Loch Ness. I've been picking places to eat, sites to see, bookstores to browse, etc. It's a perfect activity to do on a cozy weekend morning with a cup of coffe in hand with the Travel Channel on in the background. 



What I'm Reading 



The Goldfinch 

I started The Goldfinch a couple weeks ago and so far it has been really good! I think what I like about it the most is the in-depth descriptions of the details of Theo, the main character's, life. Nights getting Chinese food with his mom, visits to the pawn shop that he likes to hang out in, etc. Alls settings are described so vividly, it's like you're there in New York walking it with him. I also think the book has very strong character-development. Some books require a lot of words to get insight into the characters, but somehow Donna Tartt does an amazing job of providing you with an in-depth understanding of characters with few words.
