Spring is back! And so am I! It's been a while since I've had a chance to sit down and write an article. But I am back and ready to talk baking!! Since finishing up school and beginning work one of the hobbies that I've begun taking up on the side is baking. In autumn it was apple cinnamon cookies, winter was an assortment of Christmas favorites, and now I am excited to start baking in spring! So here are a few recipes that are on my "to bake" list.
Mini Dutch Baby Pancakes

I absolutely love the look of these dutch pancakes! They have a lemon curd filling and blueberries and lemon slices sprinkled on top to give them bright color. Baked in an iron skillet, these pancakes are a perfect, rustic, spring breakfast and I can only imagine how delicious they would be accompanied with a cup of coffee. Try this recipe out!
Rhubarb Rose Upside Down Cake

I have never been a fan of rhubarb but honestly this cake looks so beautiful! Such wonderful contrast between the inside vanilla color and the dark pink rosey exterior. Even more amazing than the color is that there is a pistachio crumb that goes along with it. I envision this at an outdoor spring get together or even a spring birthday! Get the recipe here.

My mouth is watering just looking at this picture..... I am starting to notice a theme in the spring baking recipes that I've chosen, fruit!
